This thread is for all Side Dish Recipes, including Potatoes, Veggies, Rice Dishes, etc.

The Salad Recipes should still go in the Salad Recipes thread, I will leave them there and not post them in this thread.

I am also in the process of copying the side dish recipes to this thread from the Cookout Recipes thread.

There will be some old recipes, some new.  I am making these new threads (classifying the recipes) in an attempt to organize the recipes we have, so we can find them back if we need a certain recipe.

Feel free to add your own!!

Acorn Squash

1 acorn squash
2 tablespoons brown sugar
1 tablespoon butter
nutmeg
salt
pepper

Preheat oven 325 degrees.

Wash and dry acorn squash. Cut in half and remove seeds and strings. Place cut side down on a rimmed cookie sheet. Bake in 325 degree oven for 25 minutes. Turn halves up, and sprinkle each half lightly with salt and pepper. Into each cavity put 1 tablespoon brown sugar, 1/2 tablespoon butter, and a sprinkling of nutmeg. Bake cut side up for 15-20 minutes, or until flesh is tender and easily pierced with a toothpick. Serves 4

Broccoli Casserole

1/4 cup finely chopped onion

6 tablespoons butter, divided

2 tablespoons flour

1/2 cup water

1 jar (8 ounces) processed American cheese spread, like Cheez Wiz

2 packages frozen chopped broccoli, thawed and well drained

3 eggs, well beaten

1/2 cup cracker crumbs


Sauté onion in 4 tablespoons of the butter until soft. Stir in flour. Add water. Cook over low heat, stirring, until mixture thickens and comes to a boil. Blend in cheese. Combine sauce and broccoli. Add eggs; mix gently until blended. Turn into greased 1-1/2 quart casserole. Cover with cracker crumbs. Dot with remaining butter. Bake at 325 degrees for 30 minutes.

Serves 6 to 8

Creamy Veggie Side Dish

2 cans of Green Beans, Drained
2 cans of Corn, Drained
2 cans of Cream of Celery Soup or Cream of Mushroom Soup
16 oz Sour Cream
3 c shredded Mild Cheddar Cheese
1 lg Onion, chopped
2 sleeves of Ritz Crackers
2 sticks of Butter
dash of Lawry's Seasoned Salt

Mix all ingredients together except for the crackers and the butter. Place mixed ingredients in a greased 9 x 13 pan (or other deep casserole dish).

Melt both sticks of butter and combine with crushed Ritz Crackers. Pour over the top of the other ingredients.

Bake at 350 for 35-45 minutes. Serves 8-10.

Broccoli Cheese Side Dish

16 oz package frozen broccoli
2 eggs
1 cup shredded cheddar cheese
1 cup mayo
1-2 sleeves crushed Ritz crackers
1/2 stick melted butter/margarine

Preheat oven to 350 degrees. Generously butter a 13"x9" baking dish. Cook broccoli according to package directions, drain, and cool until it is warm to the touch. Mix together cooked broccoli, eggs, cheese, and mayo. Pour mixture into prepared baking dish. Sprinkle crushed Ritz crackers over top until covered, and sprinkled melted butter on top of cracker.

Let cook for 30-35 minutes or until crackers are golden brown.

**Large Batch**

Party Potatoes

20 pounds potatoes, peeled, cubed and cooked

4 cans (12 ounces each) evaporated milk

3 packages (16 ounces each) process cheese (Velveeta), cubed

1 c butter, cubed

2 T salt

2 t pepper

Paprika


In several large bowls, combine potatoes, milk, cheese, butter, salt and pepper. Transfer to four greased 13-in. x 9-in. x 2-in. baking dishes. Bake, uncovered, at 350° for 45-50 minutes or until bubbly. Sprinkle with paprika if desired.

Yield: about 60 (3/4-cup) servings.

**This is very good. My Mom makes this when she goes to a potluck.**

Scalloped Corn Casserole

1 egg

1 cup sour cream

1 cup margarine, melted

1 can whole kernel corn, undrained

1 can cream style corn

1 box Jiffy corn bread mix

1 small onion, chopped (optional)

Mix all ingredients and pour into greased casserole dish. Bake at 350 degrees for 45 minutes.

Maple Glazed Carrots

1 1/2 lbs whole baby carrots
3 tbsp butter
1/2 c maple syrup
1/2 tsp salt


Cook carrots in boiling, salted water until almost tender. Drain, reserving 1/4 c liquid.

Melt butter and roll the carrots in it.

Add reserved liquid, maple syrup and salt.

Cook uncovered, until
liquid is thickened and carrots are tender - about 10 minutes.

Serves 6

**Copycat**

Kraft Deluxe Macaroni and Cheese

8 cups water
2 cups uncooked elbow macaroni
1/3 cup shredded cheddar cheese
1/2 cup Cheez Whiz
2 tablespoons whole milk
1/4 teaspoon salt

1. Bring 8 cups (2 quarts) of water to a boil over high heat in a large saucepan. Add elbow macaroni to water and cook for 10 to 12 minutes or until tender, stirring occasionally.

2. As macaroni boils, prepare sauce by combining cheddar cheese, Cheez Whiz, and milk in a small saucepan over medium/low heat.
Stir cheese mixture often as it heats, so that it does not burn. Add salt. When all of the cheddar cheese has melted and the sauce is
smooth, cover pan and set aside until macaroni is ready.

3. When macaroni is ready, strain water, but do not rinse the macaroni.

4. Using the same pan you prepared the macaroni in, combine the macaroni with the cheese sauce, and mix well.

Makes about 4 cups.

MASHED POTATOES CASSEROLE

8-10 medium potatoes, boiled and smashed
8 oz. cream cheese
8 oz. sour cream
1/4 cup real butter (1/2 stick)
salt and pepper to taste

In a mixer bowl, combine potatoes, cream cheese and sour cream. Beat well. Add salt and pepper to taste. Turn potatoes into a casserole
dish, and dot with butter. Bake at 350 45 min.

Make Ahead Potatoes

8 medium potatoes peeled, boiled and mashed while hot
8 ounces sour cream
1/4 pound butter
2 teaspoons salt

Mix together just until blended. Allow to set overnight Bake 1/2 hour at 350 degrees. This recipe serves six or eight.

BASIC MASHED POTATOES

2 pounds russet (baking) or red potatoes
3 tablespoons unsalted butter
3/4 to 1 cup milk

Peel potatoes and cut into 2-inch pieces. (If using red potatoes, it is not necessary to peel them). In a large heavy saucepan simmer potatoes in salted water to cover by 1 inch 10 minutes, or until tender, and drain in a colander. In pan or bowl combine potatoes, butter, and 3/4 cup milk. With a potato masher mash potatoes until smooth, adding more milk if necessary to make creamy. In pan reheat potatoes over moderately low heat, stirring, and season with salt and pepper.

Serves 4.

Parmesan Potato Casserole

4 potatoes medium size
2 cups grated Parmesan cheese
2 eggs
1 cup milk
Salt and pepper

3-4 tablespoons butter

Boil the potatoes until tender. Drain, peel with still hot, mash and place into bowl. Add the Parmesan cheese, eggs, milk, salt and pepper, mixing thoroughly. Transfer to a baking dish smeared with butter and bake in an oven preheated to 400 for about 30 minutes.

Mixed Greens with Corn Bread Dumplings

2 pounds turnip greens
2 pounds mustard greens
2 1/2 quarts water
1 onion, quartered
1 pound salt pork, cubed
Salt and pepper, to taste
2 teaspoons sugar

Dumplings
1 1/2 cups cornmeal
1/4 cup flour
1 teaspoon salt
1 cup hot water

Tear off and discard any tough stems from the greens.Wash the greens in several changes of cold water; drain.

Bring the 2 1/2 quarts of water to a boil in a large stockpot and add the onion and salt pork. Simmer 30 minutes and add the greens; salt and pepper to taste. Add 1 teaspoon of the sugar and simmer about 2 hours.

Meanwhile, combine the cornmeal, flour, 1 teaspoon salt, and the remaining sugar in a mixing bowl. Slowly add hot water to this mixture, stirring. Add just enough water to make a stiff, manageable mixture.

Break off bits of cornmeal dough the size of walnuts and shape into balls. Drop the balls into the boiling greens. Cover and continue cooking 30 minutes.

CREAMY MASHED POTATOES WITH CHIVES
Yield: 10 servings

3 pounds peeled brown or red potatoes,quartered
2/3 cup milk
1 teaspoon salt
2/3 cup (5-oz.) cream cheese with chives & onions

Place potatoes in a large pot, and cover with water; bring to a boil. Reduce heat and simmer for 10 minutes or until tender. Drain. Return potatoes to pan, add the milk and salt. Mash the potato mixture with a potato masher to desired consistency. Add the cheese, and stir just until blended.

Note: You can subsitute 2/3 cup cream cheese, 2 tablespoons fresh chives, and 1 tablespoon chopped onion for the flavored cream cheese.

Mexican Yellow Squash

2 large yellow squash
2 tomatoes
1 small red onion
1/2 cup picante sauce
1/4 cup water
1/2 cup mozzarella

Cut the squash, tomatoes and onions in bite-sized elongated slices.
Add water and picante. Cook over medium heat until tender and most
of water is cooked off. Pour into serving dish. Add mozzarella
and cover so it melts.

Mustard Greens

2 1/2 lbs mustard greens, washed and chopped into 1-in. pieces
6 slices bacon, cut into 1-inch pieces
2/3 cup chopped onions (optional)
1 or 2 dashes cider or red wine vinegar

In a pot large enough to cook the greens, fry bacon. Add the greens
along with onions (optional) Cook, stirring with wooden spoon,
until greens are coated with fat. Cover the greens with water and
season with salt.

Bring to boil. Cover the pot, reduce heat, and simmer until tender.
Stir occasionally and add water if they threaten to scorch. When
done, increase heat to med-high, stir often. Boil off nearly all
the cooking liquid.

Add vinegar. Season with salt, pepper and sugar. Serve very hot.

Mustard Greens #2

2 pounds tender mustard greens
1 ham hock or 1/3 pound salt pork
1 onion, chopped
2 cups water, approximately
salt
1 teaspoon sugar, optional

Wash the mustard greens in several changes of water. If there are
tough stems, break them off and discard.

Place the greens in a kettle and add the ham hock or salt pork.
Add the onion, water, and salt. There should be enough water barely
to cover the greens. Bring to a boil and simmer approx 2 hours.

When ready to serve, drain and sprinkle with sugar if desired. Toss
and serve hot. Many people enjoy mustard greens sprinkled lightly
with vinegar.

Oven-Fried Potatoes

12 potatoes, peeled and cubed
1/4 cup grated Parmesan cheese
2 tsp salt
1 tsp garlic powder
1 tsp paprika
1/2 tsp pepper
1/3 cup vegetable oil

Place potatoes in two large resealable plastic bags. Combine the
Parmesan cheese and seasonings; add to potatoes and shake to coat.
Pour oil in to two 13"x9"x2" baking pans; pour potatoes into pans.
Bake uncovered, at 375 degrees for 40-50 minutes or until tender.
Yields: 12 servings

Potato Cakes

1 cup leftover mashed potatoes, seasoned and buttered
3/4 cup plain flour (not self rising)
1 whole egg
a little milk for moistening
chopped onions (optional)

To leftover mashed potatoes add flour and egg. Mix together and
gradually add a little milk for moistening. The mixture should be
able to fall off the spoon easily - don't make it too runny. Grease
a skillet and dip out by Tablespoonsful. Fry until golden brown
and crispy.

CANDIED YAMS

1 can yams, drained and mashed
1 stick margarine, melted
2 tsp cinnamon
2 tsp ginger or less
2 tsp nutmeg
1/4 cup brown sugar
1/2 cup honey
1 can pineapple bits
1 cup pecans
miniature marshmallows

Put mashed yams in casserole. Mix (with yams) together margarine, cinnamon,
ginger, nutmeg, brown sugar and honey. Mix in yams with pineapple
bits and pecans. Top with miniature marshmallows. Bake at 325
degrees until heated through and marshmallows are bubbly.
