Again, I will be copying the Main Dish Recipes to this thread that are in the Cookout Recipes thread, so you may see some you already have, but I will also be posting new ones.

Party Ham Casserole

16 ounces noodles
1 can (10 3/4 ounces) condensed cream of mushroom soup
1/2 cup milk
1 teaspoon instant minced onion
2 teaspoons prepared mustard
1 cup sour cream
2 cups cooked ham, cut in pieces
1/4 cup dry bread crumbs
1 tablespoons melted butter
1 tablespoon grated Parmesan cheese

Cook noodles as directed on package; drain.
While noodles are cooking, combine in a small saucepan the soup and milk, stirring over low heat until smooth. Add onion, mustard, and sour cream. In a greased 1 1/2 quart casserole, layer half of the noodles, half of the ham and sauce. Repeat layers. Toss bread crumbs with the 1 tablespoon melted butter and sprinkle over the casserole. Top with grated cheese. Bake, uncovered, at 325° for 25 minutes, or until golden brown and bubbly

Crockpot El Rancho Chicken

3 cups chicken, cooked and chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 10-oz can diced tomatoes with green chilies
1 green pepper, chopped
1 chopped onion
1 1/2 T chili powder
1/4 T ground black pepper
8-oz shredded cheese
12 (6- or 7- inch) corn tortillas

Place chicken in slow cooker; cover with remaining ingredients except cheese and tortillas. Cover and cook on low for 6-8 hours. Serve with warmed tortillas and cheese.

Mexican Casserole

2 lbs. ground beef
1 onion, chopped (size depends on taste)
1 tsp. garlic salt
2 4-oz. cans sliced olives
2 4-oz. cans diced green chilies
Taco seasoning (to taste)
2 15-oz. cans tomato sauce
1 large (1 lb. 8 oz.) container cottage cheese
1 large (1 lb. 8 oz.) container sour cream
1 lb. grated cheddar cheese
1 13 oz pkg. crushed tortilla chips

Brown ground beef and onion together, drain. Add garlic salt, taco seasoning, tomato sauce, olives, and green chilies.

In a separate bowl, mix sour cream and cottage cheese.

In a pan layer 1/2 of crushed chips, 1/2 of meat mixture, 1/2 of sour cream mixture, and 1/2 of the grated cheese.

Repeat layers. Bake at 350 for 30-45 min or until heated through

Quick and Easy Beef Stroganoff

1 lb Ground beef
1 can Cream of mushroom soup; condensed
8 oz Sour cream
1 can (small) mushroom stems and pieces
12 oz Egg noodles

Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, mushrooms, and noodles and cook until heated through. serves 4

Chicken Chile Casserole

1 small can green chilies, chopped
1 can condensed cream of chicken soup
1 can chicken broth
1 pint (8 oz) sour cream
4 chicken breasts, cooked and cubed
2 cups Monterey Jack (or Pepper Jack) cheese, shredded
1 dozen corn tortillas

Mix all ingredients together, except the tortillas. Layer the sauce, then the tortillas, then repeat the layers in a greased 9x13 pan. Top with more cheese. Bake at 350 until heated through, approximately 30-35 minutes.

**Copycat**

Boston Market Meatloaf

1 cup tomato sauce
1 1/2 tablespoons Kraft original barbecue sauce
1 tablespoon granulated sugar
1 1/2 pounds ground sirloin (10% fat)
6 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
dash garlic powder

1. Preheat oven to 400 degrees.

2. Combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat. Heat the mixture until it begins to bubble, stirring often, then remove it from the heat.

3. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat. Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined.

4. Combine the remaining ingredients with the ground sirloin-- flour, salt, onion powder and ground pepper. Use the wooden spoon or your hands to work the spices and flour into the meat.

5. Load the meat into a loaf pan. Wrap foil over the pan and place it into the oven for 30 minutes.

6. After 30 minutes, take the meatloaf from the oven, remove the foil and drain the fat.

7. Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan. This will help to cook the center of the meatloaf. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center. Don't spread the sauce.

8. Place the meatloaf back into the oven, uncovered, for 25-30 minutes or until it is done. Remove and allow it to cool for a few minutes before serving.

Serves 4.

**NOTE: My Mom makes a dish similar to this, except she puts the beef/bean mixture on hamburger buns, and that is her sloppy joes recipe! It is really tasty made as Sloppy Joes, and the kids love it, too!**

BAKED BEAN AND BEEF CASSEROLE

2 strips bacon
1 med. onion, chopped
1 lb. hamburger
2 (1 lb.) cans pork & beans
1/2 c. molasses
1/2 c. ketchup
2 tsp. dry mustard
1/2 tsp. salt
1 tbsp. Worcestershire sauce

Cut bacon in small pieces. Cook with onion until onion is half-cooked, drain off grease. Add meat. Cook until meat is barely done. Add other ingredients and mix well. Pour into Pam sprayed 2 quart baking dish. Bake at 375 degrees for 30 to 40 minutes. Serves about 6.

BAKED HAM AND CORN CASSEROLE

3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1/2 tsp. dry mustard
1/4 tsp. Worcestershire sauce
1/4 tsp. salt
1/8 tsp. pepper
1 can whole corn or 1 pkg. frozen corn
1 sm. onion, chopped
1/4 c. green pepper, chopped
2 c. cooked ham, cubed
1/2 c. grated Parmesan cheese (or more)
Bread crumbs

Make a white sauce of butter, flour and milk. Add mustard, Worcestershire sauce, salt and pepper. Add corn, onion, green pepper and ham. Pour in a 2-quart casserole dish. Top with bread crumbs and Parmesan cheese. Bake at 375 degrees for 25 minutes. Serves 6.

Easy Mexican Casserole

1 lb. ground beef
1-12oz. jar chunky salsa
1-10 1/2oz. can sweet corn
3/4 c. Miracle Whip
1 tbsp. chili powder
2 c. tortilla chips, crushed
2 c. shredded monterey jack or colby cheese
shredded lettuce
chopped tomato

Heat oven to 350.
Brown the ground meat. Mix with salsa. Set aside. Mix corn, Miracle Whip and chili powder together and add to the meat mixture. Layer 1/2 meat mixture, then the chips and last the cheese in 2 quart casserole. Repeat layers. Bake 20-25 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired.

Makes 6 servings.

Creamy Beef Noodle Casserole

1-1/2 pounds ground beef
1 small onion -- chopped
2 cans tomato sauce (8-oz. ea.)
1 cup sour cream
3 ounces cream cheese -- cubed
1 teaspoon sugar
1 teaspoon garlic salt -- or as needed
7 cups cooked wide egg noodles -- drained
1 cup shredded Cheddar cheese


Preheat oven to 350° F. and grease a 9 x 13-inch baking dish.

In a skillet, cook beef and onion until meat is no longer pink; drain. Remove from heat; stir in tomato sauce, sour cream, cream cheese, sugar and garlic salt; mix until blended. Place half of the noodles in a greased 9x13-inch baking dish; top with half of the beef mixture. Repeat layers.

Cover and bake at 350 F. for 30-35 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted.

Bisquick Italian Chicken Bake

1 can Stewed tomatoes
2 can Cream of celery soup
1 can Cut green beans drained
3 c Cooked Chicken, chopped
1 t Italian Seasoning
2 c Bisquick mix
1-1/2 c Milk
1/2 c Cheddar cheese - shredded
1/2 t Italian seasoning


Heat oven to 450 F. Mix tomatoes, soup, green beans, chicken, and 1 teaspoon Italian Seasoning, and pour into a 9x13 inch baking pan. Blend bisquick and milk together and pour evenly over chicken mix. Sprinkle with cheese and 1/2 teaspoon Italian Seasoning. Bake for 25 to 30 minutes until cheese has melted and crust is light golden brown.

Family Favorite Casserole

1 lb. hamburger
1 green pepper,(diced)
1 med Onion(diced)
2 cups cooked Rice
3 cups shredded Mozzarella cheese
1/4 cup ketchup
1 tbsp. Chili powder
1 tbsp. Garlic powder
salt to taste
3 cups tomato juice


In skillet, sauté onions, and green pepper until onions turn opaque, add hamburger and brown until no longer pink, drain. Add chili powder, garlic powder, salt, and ketchup, stir in tomato juice. Simmer on low heat until it thickens slightly (and while fixing rice). Fix the rice according to directions on box, mix into hamburger mixture. If too dry add more juice.

In large baking dish, place part of rice/hamburger mixture, cover with shredded cheese. Continue to layer, ending with cheese. Can place green pepper rings on top.

Place in oven set on 350 degrees until casserole heats through and cheese is melted. Freezes well for leftovers.

Chicken Alfredo Casserole

6 ounces fettucine noodles, cooked and drained
10 ounce package frozen broccoli cuts
3 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
2-1/4 cups milk
2-1/4 cups chopped cooked chicken
1/2 cup parmesan cheese, for sauce
1/4 cup parmesan cheese, for top

Cook pasta according to package directions: drain and set aside. Run water over broccoli to thaw.

Sauce: In large saucepan, melt butter or margarine. Stir in flour, basil, salt, and pepper. Add milk all at once. cook and stir until thick and bubbly. Cook and stir one minute more. Remove from heat; Stir in chicken, 1/2 cup Parmesan cheese, and well drained broccoli. Add pasta and toss to coat.

Place chicken mixture in greased 9x13 baking dish. Cover with foil. Bake at 350 for 20 minutes. Remove foil. Sprinkle 1/4 cup Parmesan cheese. Bake, uncovered for 5 to 10 minutes more or until heated through.

Chicken and Dressing Casserole

1- pound chicken, boneless, skinless breasts
1 can cream of mushroom soup
1 can cream of celery soup
2 cups chicken broth
1/2 cup butter or margarine, melted
1-8 ounce package herb seasoned stuffing mix
1 cup shredded cheese

Cook chicken; cool, debone, and cut meat into bite size pieces. Mix soups and broth; add chicken to the mixture. Add butter or margarine to dressing mix. Combine chicken mixture with the dressing mixture. Place in a 2 to 2 1/2 quart casserole and bake at 350F for 30 minutes. Top with shredded cheese during the last 5 minutes if desired. Serves 6.

Cola Ham

1 whole ham, sliced
1 can of cola (any brand), not diet
2/3 c brown sugar

Place ham in a 9x13 pan (you will need aluminum foil to cover this) or in a roasting pan with a lid. In a bowl, mix cola and brown sugar. Separate slices of ham slightly and spoon cola/brown sugar mixture over ham, making sure some runs down in the slices.

Cover tightly with foil or put lid on roasting pan. Heat oven to 300 degrees and put ham in oven. Every 30 minutes while it is cooking, baste ham with cola/brown sugar juices in pan, making sure to slightly separate the slices so the juice gets down in there when you baste. Re-cover tightly when you are done basting. Ham is done when it is heated through and the edges of the ham slices are starting to caramelize, about 1 1/2-2 hours, depending on the size of the ham.

NOTE: You could do this with turkey also.

Hot Chicken Salad Bake

4 cups chopped chicken breast (6 breasts)
1/2 stick butter or margarine
2 cups mayonnaise
4 tsp. lemon juice
4 tsp. chopped onion
4 cups celery, chopped
1 cup shredded cheddar cheese
2 cups plain potato chips

Cook chicken with small amount of water, butter/margarine and salt. Cut chicken into bite sized pieces and mix with remaining ingredients except for cheese and chips. Put into a large baking dish. Top with shredded cheese and potato chips. Bake at 375 for 30 minutes until bubbly. 10-12 servings

Beef Pot Pie

1 lb. ground beef
1/4 cup chopped onion
1 pkg. (10 oz.) frozen peas and carrots, cooked, drained
1 cup chopped cooked potatoes
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
2 Tbsp. butter or margarine
2 Tbsp. flour
1/2 tsp. salt
1 cup water
1 can (8 oz.) refrigerated crescent dinner rolls

BROWN meat in large skillet on medium heat; drain. Add onion; cook until tender, stirring occasionally. Add vegetables and prepared cheese product; mix well. Spoon into 12x8-inch baking dish.

MELT butter in small saucepan on low heat. Add flour and salt; stir with wire whisk until well blended. Cook 2 minutes or until bubbly, stirring occasionally. Gradually add water, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Reduce heat to low; simmer 3 to 5 minutes. Pour over meat mixture.

SEPARATE dough into 4 rectangles; firmly press perforations together to seal. Place over meat mixture.

BAKE at 375°F for 20 to 25 minutes or until golden brown.

Makes 6 to 8 servings

Meatball Casserole

1 layer raw potatoes, sliced
1 layer raw onions, sliced and separated into rings
1 layer uncooked bacon strips, cut into 1" pieces
1 layer celery and/or green pepper, sliced
1 layer carrots, sliced
1 layer small uncooked meatballs
1 layer cheese slices (American or Cheddar)
3 tbsp. uncooked rice
salt and pepper
1 can cream of chicken or celery soup
1 c. milk

Preheat oven to 350. Butter sides and bottom of a baking dish.

Put ingredients in baking dish in layers in order given, except for milk and soup. Salt and pepper to taste. Mix soup with milk and pour over top. Bake for 1-1/2 hours

Pork Chop Bake

1 tablespoon vegetable oil
6 pork chops
1- 10.5 ounce can condensed cream of mushroom soup
1/2 cup milk
1/2 cup sour cream
salt and pepper to taste
1 24 ounce package frozen hashbrown potatoes, thawed
1 cup shredded Cheddar cheese
1-1/2 cups canned French fried onions

Heat oil in a large skillet over medium high heat. Add pork chops and saute until browned. Remove from skillet and drain on paper toweling. Meanwhile, preheat oven to 350F. In a medium bowl mix together soup, milk, sour cream and salt and pepper to taste. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions. Mix together and spread mixture in the bottom of a 9 x 13 inch baking dish. Arrange pork chops over potato mixture. Cover dish and bake in the preheated oven for about 40 minutes. Remove cover; top with remaining cheese and onions and bake uncovered for 5 more minutes. Makes 6 servings.
